PRODUCTION
The olives are hand picked in September, at the beginning of the drupes veraison, so to obtain a balanced and aromatic oil.
The olives are brought to the oil mill and squeezed on the day they are picked, and every production phase is carefully monitored, to maintain their flavor and nutritional qualities.
This is how we produce a high-quality Extra-Virgin Olive oil, with low acidity, few peroxides and rich in polyphenols.
